If I click on Create Mail, an email screen opens, and then when I go to the
address book and highlight the address I want, how do I get that address to
go into the "To" address on my new email?
Don't open the address book. Click the To button in front of the To field
to open the Select Recipients box. Hold the Ctrl key while you single
click on each name to highlight. Then click on the To button to add them.

Or just start typing the addressee's name in the appropriate (To or Cc)
field, if you have auto-complete on.
To get to the switch: Tools/Options/Send.
